Waterbrook Winery 2010 Reserve Cabernet Sauvignon, Columbia Valley, $24

It starts with Doval Vineyard on the Wahluke Slope and includes Yakima Valley sites Blackrock, Canyon Vineyard Ranch and Elephant Mountain. The nose hints at elegance from the start with cherry jam on toast, followed by plums, espresso, mint and eucalyptus. Flavors bring more plums on the rich entry as well as cherries and cocoa, backed by supple tannins and pleasing acidity. Suggested pairings include pepper-crusted steak and roasted rosemary lamb.
