As one of the Walla Walla Valley’s largest and highest elevation sites, Les Collines sells fruit to more than 40 wineries each year, but its reputation has been built upon red varieties — not Riesling. Chad Garofalo is working to change that with this release, which opens with a nose of dusty Granny Smith apple, lime, quinine and grassiness. The drink is deliciously dry with more apple and lime, and it’s particularly fascinating with the rounded edges of the midpalate.
