Skyline Vineyard, at 400 acres the largest site in Idaho, also is essentially an estate planting for Idaho’s largest winery, and this early-ripening grape serves as a workhorse for the Gem State’s industry. Here’s a delicious example at a remarkable price, offering aromas of black cherry, blueberry, vanilla and charcoal as well as hints of chocolate-covered caramel sprinkled with sea salt. The drink is dark and a bit hedonistic with cassis and blueberry flavors swirling amid dried Montmorency cherry acidity and black tea tannin, finished by fig, smoked meat and vanilla. Suggested fare includes grilled kabobs with vegetables and mushrooms or a porterhouse steak.
