This West Richland, Wash., winery devotes 95 percent of its production to the noble grape of Germany, and a growing amount of its attention is being paid to dry styles. It carries a theme of petrol, white peach, dried pineapple and nuttiness, backed by baked Gala apple and Asian pear with lemony acidity and slatiness to easily balance the residual sugar of 0.8%. Suggested dessert pairings include cheesecake, pumpkin pie and pound cake recipes developed by Sara Lee.
