Cornell horticulture graduate Betsey Wittick took the lead on this historic Bainbridge Island winery, and she’s done a delicious job with this white grape that’s native to the Loire Valley in France but also thrives in the maritime climate of the Puget Sound. Clean, bright and minerally aromas also offer up green apple, white peach, lemongrass and caramel. They lead to explosive flavors of white orchard fruit — pear, peach and apple — followed by kiwi fruit and honeydew. Tremendous acidity, a late hit of dried apricot, and terrific length make this quite impressive. Enjoy with fare from the Salish Sea and summertime salads.
