Juice from Declava Vineyard spent 27 months on the lees, but it’s far from yeasty as aromas of dusty pear, Granny Smith apple, a twist of lemon and light toast lead to a crisp entry of tart apple and Key Lime. The bubbles are lively, and the dosage creates the residual sugar 1.6%, making for an off-dry midpalate yet the finish is clean. This received a gold medal at the 2015 British Columbia Wine Awards.
