The Puryears established these Chardonnay vines near Zillah, Wash., in 1980 and launched their winery in 1985, and winemaker Bill Mechem watched over this lot in new 228-liter barrels from the Vosges forests near Alsace. That oak program helps create a theme of butterscotch, baked Gala apple, poached pear with honey and crushed filberts with finish of honeysuckle and lemon. The Puryears enjoy pairing their estate Chardonnay with hot buttered popcorn and a movie.
