R-273Dana Madsen develops his after-dinner treat with Petit Verdot, and while it’s not a traditional Port-style approach,  it’s mighty tasty. Dense aromas of blackberry, black cherry, chocolate-covered wafer, toasted nut and Whopper candy lead to easy sipping, a flavor profile of dark plum and bittersweet chocolate. In this case, the Bordeaux blending grape adds a fine-grained tannin structure with bittersweet chocolate and finishes with pleasing acidity. It’s a good sipper for a chilly night around the fire pit at 7% percent residual sugar or paired with a wedge of Stilton and a handful of filberts.
