The choice of 28 months in new American oak allows for a nose of Bing cherry and cassis with chimichurri spices, black olive and crushed leaf. Its flavor profile goes a bit darker with rewarding blackberry and dark plum notes and enjoyable sandy tannins. Finishing touches of molasses and brown sugar add a bit of hedonism and length to the finish. Suggested pairings include Beef Wellington, rack of lamb, gnocchi in a sage butter sauce and Nicoise salad.
