Nate Klostermann has taken over from trend-setting Texan winemaker Rollin Soles at this historic Oregon bubble house that’s well worth pulling off Highway 99 in Dundee for. Their high-density plantings at their estate Lone Star Vineyard in Hopewell lead to aromas of fresh-cut apple, sweet Bartlett pear, cantaloupe and clove. The apple profile continues with a focus on the Honeycrisp variety. While the residual sugar sits at 1.3%, the winery slots this on the dry edge of the International Riesling Foundation scale because of its broad delivery of acidity that brings brightness and just a touch of spritz. As for food pairings, Klostermann offers up Chicharrónes or Cochinita Pibil, which is pulled pork shoulder in achiote paste, orange juice and lime.
