The light influence of oak allows for aromas of cranberry, cola, cigar box, saddle leather and California red peppercorns. Red currant and Montmorency cherry flavors create a lighter, Old World expression of Cabernet Sauvignon, making for pleasing acidity, ample tannins and a finish of leather and spice. Suggested pairings include dishes featuring a heavy butter cream sauce or steak topped by blue cheese.
